Ingredients

2 cups fresh spinach
- 200 grams paneer, cubed

1 onion, finely chopped

2 tomatoes, pureed
- 2 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon garam masala
- 2 tablespoons oil
- Salt to taste
- Water as needed
- Fresh cream (optional) for garnish
Directions
- Blanch the spinach in boiling water for 2 minutes, then immediately transfer it to ice water. Drain and blend into a smooth paste.
- Heat oil in a pan. Add cumin seeds and let them splutter. Sauté onions until golden brown, then add ginger-garlic paste and green chilies.
- Add the tomato puree and cook until the oil separates. Mix in the spinach puree.
- Add salt and garam masala, cooking for an additional 5 minutes. Gently fold in paneer cubes and simmer for another 5 minutes. Add water if needed for desired consistency.
- Garnish with fresh cream if desired and serve hot with roti or rice.
